You Cannot Rely on Last Year’s Price to Set This Year’s Pricing

For decades, beef procurement teams could rely on seasonal rhythms to guide purchasing decisions. The spring rally for Choice short loins typically began in March, providing a predictable window to secure supply before summer demand tightened the market.

In 2026, that rhythm has shifted.

The 2026 beef outlook is not driven by temporary volatility or speculative enthusiasm. It reflects structural herd contraction. With U.S. cattle inventory at 86.2 million head—a multi-decade low—the industry is operating from a supply floor.

When supply hits structural constraints, pricing dynamics shift. Historical averages lose relevance. Procurement strategies built on seasonal normalization begin to fail. Choice short loin prices already reflect a market rationing limited supply through higher bids.

This environment requires forward-looking analysis, not backward-looking comfort.

The Short Loin Breakout: When the ‘March Rise’ Became the ‘February Jump’

Choice short loin (174 3) pricing provides a clear signal consumers are not walking away from beef, despite higher prices.

So far in 2026, short loins have been running at seasonal all-time highs (Figure 1). Instead of the traditional March rally, the market experienced a February acceleration—effectively pulling the buying window forward by roughly four weeks.

This simple comparison illustrates the core issue: even if seasonality continues to push prices higher into late May, last year’s price level no longer provides a reliable anchor for this year’s procurement strategy.

This early surge has already pushed prices into record seasonal territory before peak grilling demand begins. DecisionNext forecasts prices will continue to climb into summer, likely peaking above $10.50/lb by the end of May (Figure 2).

The implication is clear: waiting until traditional spring procurement windows will almost certainly expose margins to unnecessary risk. With prices already at seasonal highs and forecasts pointing toward a May peak above $10.50/lb, the market is signaling continued strength—not stabilization. In 2026, the question is no longer whether prices will climb, but how high they will go. Procurement strategies must reflect the forecasted trajectory, not last year’s averages.
